OLIVE OIL pOUNDCAKE With ORANGE & CARDAMOM.

This is a perfect treat to serve alongside a cup of tea and good conversation. The cake is super moist and bright and the cardamom provides a nice hint of warmth.

makes 1 standard sized loaf

- ingredients -

  • 2 C. GF one-for-one flour

  • 1 C. brown sugar

  • 1 1/2 tsp. baking powder

  • 1 tsp. cardamom

  • 1 tsp. salt

  • 1 C. olive oil

  • 3 large eggs

  • 1/2 C. almond milk

  • 2 T. orange juice

  • 1 tsp. vanilla extract

  • zest of 2-3 oranges

- drizzle -

  • 2 C. powdered sugar

  • 1/4 - 1/2 C. orange juice

  • pinch of salt

- method -

  • Preheat your oven to 325ºF.

  • Grease loaf pan with olive oil.

  • Whisk flour, baking powder, cardamom and salt in a small bowl. Set aside.

  • In a medium sized bowl mix brown sugar, eggs, olive oil, orange juice, vanilla, and zest. Mix until smooth.

  • Add the dry ingredients in two parts, trading off with the almond milk. Stir until creamy.

    • This batter is very wet - don’t worry!

  • Pour batter into loaf pan and bake for 75 minutes or until a toothpick comes out clean from the center.

  • Let the cake cool fully until removing from the pan.

  • To make the drizzle pour powdered sugar into a small bowl, toss in a pinch or salt and slowly add in orange juice until the consistency is like paste. Using a fork drizzle of the cake.
