OLIVE OIL pOUNDCAKE With ORANGE & CARDAMOM.
This is a perfect treat to serve alongside a cup of tea and good conversation. The cake is super moist and bright and the cardamom provides a nice hint of warmth.
makes 1 standard sized loaf
- ingredients -
2 C. GF one-for-one flour
1 C. brown sugar
1 1/2 tsp. baking powder
1 tsp. cardamom
1 tsp. salt
1 C. olive oil
3 large eggs
1/2 C. almond milk
2 T. orange juice
1 tsp. vanilla extract
zest of 2-3 oranges
- drizzle -
2 C. powdered sugar
1/4 - 1/2 C. orange juice
pinch of salt
- method -
Preheat your oven to 325ºF.
Grease loaf pan with olive oil.
Whisk flour, baking powder, cardamom and salt in a small bowl. Set aside.
In a medium sized bowl mix brown sugar, eggs, olive oil, orange juice, vanilla, and zest. Mix until smooth.
Add the dry ingredients in two parts, trading off with the almond milk. Stir until creamy.
This batter is very wet - don’t worry!
Pour batter into loaf pan and bake for 75 minutes or until a toothpick comes out clean from the center.
Let the cake cool fully until removing from the pan.
To make the drizzle pour powdered sugar into a small bowl, toss in a pinch or salt and slowly add in orange juice until the consistency is like paste. Using a fork drizzle of the cake.
