quick apple crumble for 2.
This is an easy, sweet treat for when you’re short on time but want something a little extra special. You can easily sub out the apples for your favorite berries or choice of fruit. It pairs well after pretty much any warm and cozy dish.
serves 2

- ingredients -
1 medium apple
splash of almond extract
splash of vanilla extract
1 1/2 tsp. sugar
squeeze of lemon juice
pinch of salt
- crumble -
1 T. butter
1 T. brown sugar
2 tsp. sugar
1/4 tsp. pumpkin pie spice or cinnamon
1/8 tsp. salt
3 T. oats
2 T. gluten free flour*
2 T. chopped nuts
- method -
Preheat your oven to 350ºF.
Chop apple into small cubes and place in a small bowl. Add extracts, sugar, lemon, and pinch of salt. Mix well and set aside.
In another small bowl melt butter, then add remaining ingredients and stir until well combined.
In two oven safe dishes,* split the diced apples evenly in each dish. Top with the crumble, splitting equally.
Bake for 20 minutes, until golden brown.
enjoy while warm and with a small scoop of icecream or whipped cream!
